Bubblegum from IPAs

    Currently drinking a bomber of Stone Enjoy By 12.26.14 and it is very fruity and I'm getting a sort of bubblegum aroma that I often get from very tropical fruit forward IPAs. Anyone else get this or is it my strange palette?

    I have encountered a clove-like note in an IPA, but not what I'd call "bubblegum". As for Stone Enjoy By, no.

    Fresh Bear Republic APEX IPA out of a snifter at the source. Tons of BubbleGum.

    Enjoy By? Bubble Gum onions maybe??

    Must be the hop bill.:astonished:

    Never got that flavor from Enjoy By and as far as any IPA--perhaps the occasional Belgian IPA such as a Little Sumpin Wild. A little goes a long way and not something desirable in a regular IPA for me.

    I see hop descriptions that say bubblegum all the time and I can never pick it out.

    Perhaps someone could correct me if I am wrong but isn't bubble gum scent and flavor you get sometimes from the yeast? It's one of those fruity esters yes? Along the lines of banana flavor?

    utopia Jane. Yes banana Scent is very similar to bubble gum scent.

    Yeah, I think you have it, @utopiajane. Fermenting at a temp that is too high is a cause of this flavor. Banana flavor is also included in this brewing fault.

    Edit: according to John Palmer's book, How to Brew, this flavor will not go away with extra time in the bottle.

    I'm drinking an Enjoy By 12.26.14 as well and I can kind of see what you're talking about, but not nearly to the point of a beer that has that ester on purpose like a Belgian beer.

    I have seen some reports of this type of flavor from some american ale yeasts. They are usually associated with fermenting at higher temps.

    So interestingly I almost never get bubblegum flavors from beers, even Belgians and those that are classically more associated with this character. However, I recently had a COAST HopArt and it had tons of bubblegum characters. I try essentially everything from COAST, including having had HopArt more times then I can count, and have never gotten such a character. So there's either something funky about the yeast strand they used for that batch, or my taste buds are severely out of whack.

    For what its worth, I do not enough this character in IPAs.

    I thought FFF Yum Yum smelled like Juicy Fruit gum.

    I have definitely noticed a note of bubblegum in Brooklyn Sorachi Ace but not in anything else.

    Not necessarily a bubblegum story, but...

    When I drank a Parkway Get Bent Mountain IPA a couple years ago, I got a distinct taste of strawberry frosting while drinking. Turned me off.

    Now that you mention that, it is very much a Juicy Fruit gum type thing I got. I've gotten it from many of the highly hopped homebrew IPAs I've made when I used hops like Nelson, Galaxy, even a bit from a Mosaic beer I did.

    I usually get bubblegum from spiced ciders. Woodchuck Fall is a perfect example, and it's awesome.
