Not a lot to see at Chimay because they don't allow public tours and very few industry/private tours of the brewery itself. The abbey grounds are open to tour. Good photo ops and maybe take in a prayer service in the chapel and listen to some Gregarian chanting. Their tap room about a mile away offers meals, their beers, souvenirs and a few rooms for overnight guests. Very rural and charming area.

I knocked out Sint-Sixtusabdji (no tour but neat tap room and visitor center on the grounds), Orval (some limited tours of the grounds and a brewery tour if you know the right people. Great abbey restaurant for food and beer), Koningshoeven (of all the Trappist monasteries, they are the best for visitors, tours, food, beer and shopping), and all the other Trappist breweries on one tour/trip. If you had a couple of more days, you could see Hoegaarden (great restaurant) and Phantome in a day or so.

Drinking a pint at the Gravity Bar at St. James's Gate is pretty damn cool.

This isn't really an answer....in my experience the breweries with the best beer aren't necessarily the best visits. Hill Farmstead is cool because you're finally there and it's remote and pretty but the experience is all about buying the beer, not the hang. I haven't been since they've opened the new building where you can buy a full pour or a on-premise bottle but still, I am always psyched to buy the beer and get it in my car then go home and drink it.
