California common using 2112

    Hey guys, just did my first California common and I used 2 smack packs of 2112 for a 2.5 gal batch and It started fermentation just under 10 hrs at 62 degrees. I was wondering on how to proceed, secondary or leave in primary? I'd like to just let it go in the primary for 21 days at 62 degrees, then I plan on conditioning at room temp for 2 to 3 weeks then lager it in the fridge for say another 2 to 3 weeks before drinking.

    I would follow your plan and leave it in the primary for 3 weeks. Are you conditioning at room temperature because you are bottling?

    Well I'm not bottling, I use party pigs so I add priming sugar to the pigs to carbonate and I figure 2 to 3 weeks to carb/condition then lager in the fridge. Should I just skip the carb/conditioning at room temp and put it straight into the fridge?

    I assume that the 2/3 weeks is necessary to carb so I would do that. I've only used 2112 once, both times for pale ale style cal commons. The longer I cold-conditioned, the better my beer tasted.
