California Lager yeast 2112

    I'm getting ready to start my Cali Common on Friday. I'm kind of playing around with the idea of saving the yeast and trying a few other beers. Wyeast's web page is uninspiring. I'm wondering if this strain would work well for a Cream ale, Kolsch, or a Berliner. I'm open to other suggestions if you've made something outside of the guidelines above.

    I used to use this yeast quite a bit for CC's and Pilsners and would not be afraid to use it in a cream ale or Kolsch. A very clean yeast. Good luck!

    I think it would work great in all those you mentioned except Berliners. I have a feeling it wont handle the low ph and it's not a huge attenuator to begin with.

    Kolsch is generally pretty dry too. @inchrisin You'd want to mash long and low with little to no specialty malts if you do take a run at a Kolsch with this strain.

    Also, a cream ale with a lager yeast would simply be an AAL (not that there's anything wrong with that)

    i'm getting ready to pitch it into a kettle soured berliner this weekend, i will post the results in a few weeks

    Pitched it for a mature raspberry wheat recipe last year.
    Liked its clean lager character but it ****-blocked the fruit flava.
