Campden Tablet into Star San Batch

    I've been working with a lot of bleach lately in the brewery. I've also had to run a lot of tap water, (chloramines), on my racking equipment. This is always followed by a dunk in my 5 gal bucket of Star San. I thought about it, and I added a few pinches of campden tablet to the 5 gal bucket of Star San to prevent a build up of chlorine in the bucket. Upon thinking about this further, I don't really know what's in either.

    Star San needs a low pH to work well. Does anyone know anything about potassium or sodium metabisulfite, it's pH, or how it reacts to Star San?

    If the pH of StarSan is below 3, the sanitizer will sanitize fine. However, since chemical reactions can sometimes get weird and dangerous, it would be a good idea to ask 5 star this question.

    Based on my understanding of chemical equilibrium and the Wikipedia entry that suggests that bisulfite ion is a product of the following equilibrium, 2 HSO3− ⇌ H2O + S2O52−, I believe that reducing the pH of solution of metabisulfite would lower the amount of metabisulfite in solution (shift equilibrium to the left). But I'd need to track down some equilibrium constants (and maybe something more thorough than Wikipedia for reference?) to predict how much. I think the worst case scenario is you reduce the effectiveness of the metabisulfite. I probably would not worry about it, but why have you been working with bleach in the first place, if you have access to starsan?

    Chlorine, is a cleaner as well as a disinfectant. I routinely use bleach to dissolve beer stone and clean brew ketles,fermenters and beer bottles. After a good rinse I will use starsan for fermenters or bottles for an extra layer od protection.

    I always rinse everything I've bleached with campden dissolved in hot water then star san it. Never had a problem that way. It only takes a minute
