Candy Red IPA Critique

    10 gal batch:

    10# Halcyon Pale Ale Malt
    12# 2 Row
    1.5# Malted Wheat
    1# C-80
    1#C-15
    1# sugar
    1/2# Carafa 1 Special
    3 sachets US-05 (expiration 11/13)
    mash 150
    OG: 170
    Ferment @ ambient (~62)... and adjust
    Shit ton of hops...2oz Chinook FWH, 1 oz @30
    2 oz Centennial @ 15
    1 oz Chinook @ 5
    5 oz total Mozaic, Simcoe, and Centennial @ KO

    Brutal Brewday...hope it's worth it.

    I have no comment relative to the recipe. My only comment is that I hope that it turns out well. Please report back on how it turned out; looks tasty to me.

    Sounds extremely tasty... I assume you will dry hop the shit out of it.

    edit:was the OG 1.070?

    yes, 1.070...target 1.066...dryhop same as KO +3 oz Simcoe

    Edit: + would be if it turned out 15 SRM and/or red as hell

    I think it looks tasty. For my red ales I double crush the carafa and add about 10 minutes prior to sparge. Carafa still adds roast flavor when mashed and this limits some if it. Report back the results.

    First time using Carafa I Special...usually use just a couple oz of the Carafa III Special or Roast Barley...time will tell.

    Been pretty impressed with Midnight wheat. No roast flavors even if mashed for 60-90 min.

    That being said, double crushing the carafa before adding about 10 min prior to sparge is a good idea. I tried adding carafa at mashout to get color and instead of getting a black IPA got a red IPA that required sinamar to reach blackness, maybe if I milled it tighter it would have done a better job at adding some color (It was crushed by Northern Brewer, as I mistakenly ordered it crushed).

    And here I thought the thread might be about using that new Red-X malt.

    Beer looks tasty though. I love Chinook but never seem to use it in my own beers.
