Can't budge stuck ferm

    How did you calibrate the thermometer to make sure the 155 temp was correct.

    I have always used a quick read digital thermometer with a probe. I got a new fancy infrared thermometer and tried to use that for my brew day instead. When I mashed in I used the quick read to see how close it was and it was way off. I dumped cold water and stirred to get it down to 155ish on the probe thermometer.

    I have it written down at home but it was something like 80, 5, 10, 5 or something not too far off from that

    15% crystal malt plus 5% melanoidin + Scottish Ale yeast = low attenuation every time.

    That said, if it tastes good, package it.

    I am going to test the gravity tonight which would be almost a week from when I pitched the new yeast starter. If it is the same gravity at that point then I will package it up and see how it goes.

    I think that a lot of homebrewers get hung up on numbers. Why run the risk of making your beer worse by throwing a bunch of crap at it? Let it sit a couple weeks and see if the gravity changes. I don't think the higher fg is going to net a sweeter beer, maybe a beer higher in starch content but not sugars. After all, higher mash temps mean lower sugar content, right?

    I think 10 gravity points would be noticeable, but certainly wouldn't make it a bad beer.

    FWIW, I always giggle when someone's beer is off by 2 points and they freak out. Funny shit, that.

    Yeah, I wouldn't worry about 2 points, or even 5. I also wouldn't be worried about 10 points, as in this case, if I wasn't going to bottle it. If I was kegging I would just say screw it and throw it under gas. I just don't want to turn it into a case of bottle bombs....mainly because I don't like cleaning.
