Cantillon Grand Cru

    Hi guys,

    I have a bottle of 09 Cantillon Grand Cru that I'd like to pair with a meal, but I can't decide what sort of meal it would work best with.
    Any ideas?

    A cod perhaps? Maybe with a white wine sauce, a little parmesan or grana padano and some spinach. I don't know if you like seafood but I can see a unblended Lambic pairing very well with that.

    That sounds good! Last time I had it I remember thinking it might go well with sea food.

    How about just as an aperitif, maybe with some Gouda or a bite of ham, just so that the acidity opens up all your taste buds for whatever you choose to cook? No better opener in the world. But I realize this suggestion is a bit of a cheat. A classic Belgian usage would be to braise some meat in it. (Do you have a butcher that can get a rabbit? Or maybe a game bird?) Not for your precious bottle of course -- you could find a lesser but worthy one -- and then pair the beer with the culinary outcome.

    I am not sure about the butchers, but I could always shoot a guineafowl or some pigeons :stuck_out_tongue: Unfortunately lambic is just too expensive to to use in cooking (I have to buy it at online stores and get it shipped to me), would something like a BSP/DA work?

    I just paired this with beef tenderloin and a chimichurri sauce. Effin delicious.
