    Holy. Shit. How did these guys fly under the radar? Maybe I've been paying too much attention to other new breweries far away from here like Wicked Weed and Tired Hands... When there is a promising brewery like this in my home town. Brett? Lacto? Fermented in the wood program? Oh my god. Have my prayers been answered for a good sour producing brewery in Northeast Ohio? I think so.

    "Canton Brewing, at 120 Third St. NW, will be both a production brewery and restaurant in a 20,000-square-foot space. A Rite Aid occupies the front half of the yellow-brick building, which once housed the McCrory’s five-and-dime store."

    "The vision for the operation is something akin to Hoppin’ Frog Brewery in Akron, with the production brewery feeding the restaurant. But that’s where any comparison would stop. Canton Brewing will be spread over two floors. A 15-barrel JV Northwest brewhouse will be in full view as visitors enter the brewery. The first floor also will feature a bar, dining area and kitchen — and plenty of exposed brick. There also will be an outdoor patio. The menu is still being worked out, but Sutula said it will feature pizza and pub-style food, like burgers and grilled cheese. The basement, with its high ceilings, is being turned into an old-school rathskeller with local bricks. This giant area will house a barrel aging room — where Sutula would like to do sours— along with a private dining area, fermenters and another bar."

    This sounds amazing. Why are Ohio breweries so lacking in sour and wild beers so far? I hope they start to fill the gap.

    Awesome! Can't wait to check this place out. Downtown is starting to become a place to go again.

    I'm excited! Not so excited about the next 4 1/2 months of construction, but my brewhouse arrives on September 22 and the rest of the tanks, etc. arrive on October 13, so there's that. Plus the GABF falls right in the middle of those two events!

    I live in MI now, but lived in Canton until my mid-twenties. I am really excited about this, and can't wait for it to open so I can try it when I visit the fam!

    Awesome video about Canton Brewing Co. Brewery tour, general information, pilot beers and insight into the brewmaster's plans. Pretty long video, but it's worth it! And they go to Deli Ohio which is 1 of the best new places in Canton, OH. Cheers.

    Just a few thoughts after watching the video, albeit not so positive... I tend to be a glass half empty type of thinker, so sorry if I am offending anyone here. I'm sure they will have a lot of great things to offer.

    • That barleywine looks a little unappealing with all that carb and more foam flowing out of the bottle... I know what those beers taste like. But for 13 years old, you never know what you're going to get. A little ambitious to open that during a video interview.
    • I'm a little confused as to why he is showcasing beers with recipes that aren't finalized. I just figure the recipes of the flagship beers of a brewery would be set in stone this far into the process. I understand there is some difficulty in scaling from the homebrew to microbrew level... He's still got some time.
    • Not sure if I understand his approach to barrel aging... Won't the regular barreled beers get super sour after a while? I know what he wants to happen, but I feel like barreled sours and regular BBA beers in the same room is a recipe for disaster (unless he wants everything in a barrel to go sour). I've always heard sours need to be completely isolated (in a separate facility?). But he obviously knows way more than me about wood aging beers, so I won't contest anything until I taste... I just prefer a BBA barleywine to not be sour, and not sure if that will happen in that environment.

    Regardless, a good friend of mine has family in Canton, so I'll definitely try to make it up there to see what they have to offer. I love a good sour, so if there is another brewery in Ohio making them, I'm down.

    I don't think this is even a question of preference, BBA Barleywine - American or English - should NOT be sour at all.

    Definitely not a barleywine. I have, however, enjoyed a soured bourbon barrel aged porter by Almanac... then again, it was extremely sour and I don't think Canton is trying to go that route. Maybe they will do something similar to Jolly Pumpkin... that'd be interesting for sure.

    Fair points minus the third bullet. I think the video was done for fun to some degree though. I took it as an opportunity to meet the brewmaster and get a little insight. This didn't feel like an official, "Hey, we are Canton Brewing Co. and this is what we do," so I didn't take it too seriously. It's not like they could show anything involving brewing on a microbrew level at this point. They don't even have any actual brewing equipment in the brewery however the brick work looks fantastic.

    Just for discussion sake, I'm a little buzzed and don't feel like going to bed. I think it took some balls to open that barleywine. Definitely ambitious. I do agree with you on the flagship recipes. My only counter point would be that recipes change all the time. That doesn't really help the argument about flagship beers though. I guess he does still have time like you said.

    Your third point is the only point I completely disagree with. He never stated what styles would be in barrels other than "sours." He even said, "I'm no fool, those bourbon barrels will be infected." There are plenty of fantastic sours aged in bourbon barrels. He wants this to occur. No where does he say he's making a barleywine and putting it in barrels next to sours. I'm sure it would be a polarizing beer to say the least... like this one. De Garde - Oude English, a sour barleywine with a rDev of 21.79%. So even the unthinkable (oh no! :grimacing: a sour barleywine) has been done by 1 of the best breweries out there. I don't think Canton Brewing Co. wants to become the next Jackie O's in regards to infection issues. That sure did damage their reputation, but Jackie O's bounced the fuck back. Same thing with The Bruery. Okay, I'm getting a little off topic.

    I'll end with this. I'll be 1 of the harshest critics of this place once I can taste some beers. With that said, I can't contain my excitement for a brewery in Ohio that wants to have a sour program. We needed another one. Fuck YEAH!

    That's Tony Bellato from Havana House 3 locations throughout Northeast Ohio the OG is Boardman store. No drinks on premise great coffee, fine smokes, and great bottled beers to go. The store in Niles, OH is where he is typically a small but great tap selection http://www.beermenus.com/places/14795-havana-house, awesome wines, coffee, and of course amazing cigars including their own line called La Barba. 3rd up in Bath, OH I haven't been to yet!

    I dislike tobacco products, but I thought Havana House was a neat place. I've been to the Niles location a couple times to check out their bottles while I sip on some coffee.

    SO, the launch is nearing ever-closer. 6 pm EST at The Auricle bar/venue. Who among my fellow BA's will be attending? I don't get out of work until 8:30, but sure am making it a point to get up there! Been telling lots of customers at my place of employment that do craft and may not particularly be into social media. Save me a pint :stuck_out_tongue:
