Caramel/crystal malts in Linter equation

    Hey all,

    Hoping to find some answers after reading/talking/pondering the question of do caramel/crystal (and so on) malts get calculated into the linter equation for diastatic power?

    They don't get converted anyway so I'm thinking they don't need to be factored into the equation.

    This is right.

    Are you talking about the mash? Take the weighted average of all of the grist to get the diastatic power of the mash. crystal malts, roast malts, adjuncts all have zero and bring the weighted average down.

    I know that the diastatic power of caramel malts is 0, however since they can be steeped, I wouldn't think that it matters in the calculation of Linter. We aren't converting the sugar in them anyway, so this is where the question stems from.

    I've been back and forth on this question for a while, so I'm trying to get a decent answer.

    Dilutes the enzymes, no?

    Yep. Or another way of putting it....makes it harder for the limited enzymes to find the starches.

    There is a limit to how thin you can mash, around 3 qt/lb for all Pils malt. You need to know your malts and the DP those have. Doing Doppelbocks with all dark Munich is right on the edge. Adding 20% Pils gives some extra DP you are assured it converts.

    OP, I think you are considering the crystal malts to be 100% unfermentable which is not the case either.
