So last week I bottled my second batch of Heffeweizen, and last night I decided to crack one open to see how it was doing. It was completely flat and sugary sweet. Every other beer I've made was at least partially carbed by now, the first Heffeweizen I did was carbonated in a couple of days. I'm completely stumped as to what could have gone wrong, or more importantly what can I do to fix it. It was about 5.25 gallons and I used 4.5 oz of table sugar, boiled, cooled, stirred into the beer in the bottling bucket. They've been sitting in cardboard 12 pack boxes stacked up in the closet where the temp is about 60-65 degrees. This is the same procedure I've done for all my brews and this is the first time its gone wrong. If anyone has any advice please help because at this point I'm clueless.
i've had it happen that for some reason one or two bottles are flat..i can only think that insufficient mixing of priming sugar so that one or two bottles didn't get the proper amount..either that or your caps didn't seal..i use flip tops and sometimes the gaskets crack and won't seal
Relax..your beer will be fine. Typically, carbonation problems stem from under priming with whatever it is your using. It sounds like you used enough to get proper carbonation. Put your beer somewhere warmer, wait a week and crack another one open to see where your at. Repeat. I had a nut brown ale sit in the bottle for about four weeks before it carbonated fully.
