    Augie, I love and will always buy Epitome. Big fan of 077XX, also. Not a fan of the tasting room experience: if I want a flight of beer, I want the whole flight. I don't want someone telling me in what order to drink and I want the entire flight all at once. Going repeatedly to the bar for the next sample ruins the mood.

    Have never been told what to drink and in what order at all...I usually go 1 at a time in an order that I want and fill in the beer as I go.. have a few cards that have been taken home with drinks remaining..but i can see where you being told of the order would be incredibly annoying..

    so I haven't been explicitly told "no you can't have that beer now, have this one" BUT the very knowledgeable beertenders have recommended that I get beers in a certain order for the best experience. I was able to say "no, i want it this way" but in the end it's just beer and I generally write them down in the order that I see them on the board. So if people who work at Carton, most likely converse frequently with Augie and the brewers, and drink carton beer a lot suggest that I drink the beers in a certain way for the best experience - I mean sure okay it's a 4oz pour - waiting an extra few minutes for a different beer is fine.


    i have mixed feelings about the 1 at a time method. At times I enjoy having my 4-5 beers at once so I can take a sip or three of each - determine which ones I like best and then drink them in least liked to most liked order. Other times if I am say out with 4-5 buddies and I know we're gonna BS a lot - i rather have 1 at a time so my beers aren't getting warm as we bullshit and drink.

    the one at a time pacing has to do with space, the through the door flow, the available table space and that rooms ability to support that size dishwasher. if you've ever been in there on a day it rains on the beach, or a movie or play gets out down the street, or the many other reasons it fills up at completely random times you know how it affects the pops at the bars in and it is what it is. being a beach town we are used to "the weeds" if you don't know that aspect of the nature of that room it speaks to the efforts of the staff to keep it flowing as well as it does, and i am proud of them for it

    as far as being "told in what order" to drink them if that happened to you i am very sorry. the system works as you choose the beers that interest you and your server discusses ideas on how to order them to play the flavors in a sensible development.
    a lot of what we do is not the norm our market has taught people to expect, and what people assume about sweetness or sourness or hoppiness of a lot of our beers from name and type benefits from some discussion of each beer.
    after all our entire mission statement is about the conversation of flavor potentials in beer and doing things differently than others . for example: there is a great reason why you may want to have boat after cosmonaut this week, cosmo reads like a pastry stout when in reality all the additions are in there to be aromatic while boat reads like a small pale but has far more palate impact of bitterness than cosmo's adjuncts do in flavoring. . so if you are unfamiliar with both this discussion can help inform your decision, if you would still prefer a different order there is no way anyone in the tasting room will tell you "no," and if that happened to you, i am sorry.

    When I was there last week the order of my beers was changed from the way I listed them on the card. The bartender walked me through his thought process, which I appreciated. I didn’t say anything, cause frankly I didn’t care. And I liked hearing his thoughts behind the order. I doubt the bartender would’ve objected had I asked to maintain the original order, which I was deliberate with.

    About half the time I walk in I don't know what I'm going to get and go in random order and don't write anything down till I'm ready for the next pour. The other times I like to play a game where I write the flight down in the order I think it would be recommended.

    they had boat on at some bar in south slope last weekend and i felt home again. it had been way, way too long.

    My .02.

    If a bartender who works at a brewery with as good of a reputation and as diverse of a lineup as Carton suggests which order to go in (and I’m sure these are things talked about behind the scenes between Brewer and beertender) I would take their word for it. Nobody has to do anything but there must obviously be a method to that madness.

    So, given that OH is dropping a collab with Magnify and another collab with Kane. What do you think they'll do with Carton - if they do collab with Carton ahead of the Pastry Town event?

    I know they' done All Orange Everything before, but I wouldn't mind seeing them mash up a Highlander Weiss or a Coffee.

    million plans, zero schedule alignment, because of the other job and some other various reasons i am a real bitch to colab with, but i do try and would have loved to get something together for this
