Carton Regular Coffee 2016

    Oh man I was hoping to snag one of those stickers on Friday, which I can't believe was my first visit, but they didn't put one on either of my Joe Canal's growlers. Oh well, I will be back soon anyway!

    Yeah if you're looking to age a beer, keep it in a cabinet/cellar/closet/somewhere that won't get too warm or cold. If you're looking to keep a beer as fresh as you can, put it straight in the fridge.

    I will note though, that both FW and Avery advocate aging in the fridge due to the temperature controlled environment. Your beer will age slower to be sure, but the oxidation will be consistent.

    cans are already way slower to age than a bottle. put them in a fridge and you are slowing that down.
    i would say that what will happen in a 55 degree controlled environment will in about 1/2 the time in a room temp closet and take 3x longer in a fridge. i like reg coffee cans at their werthers toffee phase which is about a year later in both a 12 oz can and 32 oz bottle in my cellar which holds a constant 55 (so by my math that would be about 6 months in a 12 oz bottle had we made such a thing).
    i imagine the irish will go more towards a an andes kind of thing and churro will go to a flan place, but we will know if i am right in 11 months. isn't that the fun of cellaring? hypothesizing how things will evolve and integrate and testing your theory?

    another new beer from Carton. seems like Augie is chasing hyper specific flavors. really dig his descriptions on these beers.

    Thanks for the info! I've never had the patience to cellar a beer before. Or I guess it's not patience as much as a lack of will-power. That being said, I'm going to give it a shot. any issue with taking this beer out of the fridge now that its already been in there for a few days?

    No problem taking it out of the cold.

    I've always found it easier to cellar a beer when I have several of them. Some now, one or two for later.

    Damn this sounds delicious. Kind of like a spicy/Mexican stout but with a BBQ angle with the smoked malts, garlic, cumin, salt, and pepper. I love the culinary influence these guys (and @augiecarton especially) bring to brewing. Can't wait to try this one.

    how much longer will irregular likely last? go figure, I stopped by on my way home a few days before they sold em. doh!

    They'll comment on the daily tap room Facebook post on the day they sell out that cans are officially gone. They'll definitely be there at open today but who knows how long they'll last ¯\_(ツ)_/¯

    Yeah I'm a Carton super-fanboy, so I sought that out and watched it long ago. It's a great talk, one that I think other brewers and beer advocates can learn a lot from. I like how for them it's not about chasing the hottest trends in craft beer movement - they're not trying to pump out their own huge barrel-aged coffee (or coconut, as is all the rage these days) stout or make a sweet, hazy, juicy NE-style IPA like everyone else is (not that I don't love those beers too, though). Augie always talks about "impression" beers, ones that try to be everything to everyone in a glass - they don't want to make that. They want to toy with flavors, to accent certain flavors in tride and true styles (like Tharsis and IDIPA) or add new flavors to beer altogether (Intermezzo, Rav, Digger, Lily, Regular Coffee and variants, etc) to either enhance or evoke a certain experience of eating and drinking. And on top of that, the execution is SPOT ON every time. Very, very unique brewery - couldn't be happier that they're in NJ and I don't have to trade for any of their beers. Because I'd be doing that A LOT.

    Being in VA, I trade for them all the time, love Carton beers, very lucky that I've got a bunch of friends in NJ that look out for me too.

    @augiecarton Do you have any suggestions for food pairings with Gilded Lilly? I found it to be a really interesting beer, but honestly a little bit difficult to drink by itself. I'd love to know if there's a way to find some harmonic convergence with food.

    easy is simple young sheep's milk cheeses. opulent would be seared foie on brioche, leave the jams out. fun would be vanilla ice cream with chili flake shook on top. any desert topped with a crumble will be fun. if you have the time do a squash/sage risotto. low long roasted root vegetables like parsnips. cocoa rub some duck breasts and smoke them with a sweeter wood. at this point i'm sure you are sorry you asked
    few things are as polarizing as white truffle, i wouldn't stress this one. if truffles are magic for you it'll work but that's because you would put truffles anywhere. if you are neutral on truffles mostly you will wonder why anyone would waste all that money on them. if you hate truffles you basically hate sex so we will just have to accept we have many more differences than this beer and move on.

    No but I've had an issue with Regular Coffee growlers being empty before I intend them to :wink:. Seriously though, I have a couple of 4 packs and friends who do as well. No issues yet.

    Can anyone tell me if there is still churro and irish coffee cans available at the brewery? Maybe regular coffee for fills? Heading down today but would love to know ahead of time.

    Traded for some Reg Coffee cans, and one was 75% empty when it came (leak was in seam of push tab) so I guess it was not an isolated incident

    They typically update the Facebook page with what's available on Saturday about on hour before they open.
