Cascade vs Chinook

    I tend to like the C-hops for their grapefruit floral aroma that makes American IPA's so great. Their alpha acid percentage varies quite a bit with the most of the C-hops. Hops are valued for their alpha acids and essential oils, which means, the stronger the alpha acid the more bitterness you will get in your IPA and the IBU's (International Bitter Units) will increase. My list goes: Chinook (13%), Cascade (7%), Citra (11%), Centennial (7.8%) and am also a strong proponent of Simcoe (12.7%), Admiral (14.5%) and Amarillo (8.6%). As I'm sure you can tell, I enjoy Imperial IPA's such as Stone's Ruination, Laguanita's Hop Stoopid, Green Flash's Green Bullet at whopping 10.9% ABV -- made with New Zealand grown Pacific Gem hops (15.4%), and last but not least, Firestone Walker's Double Jack 9.5% ABV and made with just about every type of hop I've named here. However, I did want to mention that the dry hops they used (which increase bitterness) were: Amarillo, Cascade, Centennial, and Simcoe.
