    On a farm outside of the city of Austin, Texas you’ll find a brewery that is more reminiscent of the old-time farmhouse breweries than the modern production facilities of big brewers today. On-site well water and yeast that’s naturally occurring in the Texas Hill Country are used to make some of the most unique beers made in the United States, if not the world.

    Jester King Brewery was started on the idea of returning back to the days of farmhouse brewing and making hyper-local beverages for a discerning palate to enjoy. Anyone who’s a fan of amazing sour and funky beers knows about Jester King, even if he or she can’t get their beer in their area.

    With an emphasis placed on barrel aging and bottle conditioning, Jester King definitely makes what I’d consider the best sour beer I’ve had. Lucky for me, I was able to sit down on a call with Jeff Stuffings from jester King Brewery and enjoy a few of his beers while we talked about how the brewery got started, how they make such amazing beer, and sour beer as a whole.
