So I just recently made a IRS that I placed in a Bourbon Barrel. Planned it to have about two gallons extra for an additional variant which is a CBS variant. Had it on tap at the Firestone Invitational and added some notes to my phone on the taste. After some research, I am thinking about soaking some oak cubes in Buffalo Trace for 1 week and maple grade a syrup the night prior to adding. Has anyone done a version of CBS? if so what was your process?
