Now that they're finally open, what do y'all think of their tap room and beers? I'm planning on paying them a visit this weekend, and I was wondering how it's lived up to the hype for those who've had a chance to go

I'm going to Austin on the weekend of the 15th to visit my parents and do some other things. I've already told my mom my plans are to check Celis out, and she is excited as well.

Is the taproom open regularly now or has it just been for specific events? Are the beers available in any stores around town also?

Yes, 3-10pm Tue-Thu, 12pm-10pm Fri-Sun. They don't have any packaged beers yet, but a few bars should still have kegs from their launch week festivities.

I actually went by last Saturday when I ran into it on my way to ABW. I only had the Wit and tried the Munich Dunkel I believe. I thought it was good, but I don't think it was any better than 512 Wit. I think they hype behind their beer is the story. At the end of the day it's a Wit beer and it isn't going to blow people's minds. The tap room is nice, there is a circular bar in the center with tables around it.

Agreed to a certain extent, but at this point it's almost like the LEGEND behind their beer is the story!

Pierre revived the witbier style in Belgium and then when he came here and brewed another version of it there wasn't really anything else like it available. And then they brewed the Grand Cru! I can say for sure that that beer had a huge influence on dozens of craft brewers at the time. We really owe a lot to him and his family. And, of course, then Miller bought them out and threw it all away. What was that about? I hope that the new buy-outs don't get tossed as well, although I'm sure some of them will. At least this time around there'll be someone to take their place - after the Celis brand was shut down there was a void left for quite some time.

And not to drag this out, but damn, my friend from Austin just moved back to Philly so I don't see myself headed to TX anytime soon :slight_frown:

Well I was able to go to the brewery briefly with my wife. We each had 2 beers.

We started out with the Celis White and Uncle Billy's Lazy Day Lager (she ordered)
Then I got the Citrus Grandis and the Pale Bock which we split.

    I really like the White.
The Citrus Grandis did have a citrusy flavor but was also had a fairly strong bitterness. It was very clear but I felt it had a fuller body than really any IPA I've noticed.
I think I like the Pale Bock, it seemed to have a nice earthy hop flavor but I will need to spend more time drinking it to really judge.

I'll be back and I am looking forward to the packaged beer making its way up to DFW.
