Pierre Celis brought the venerable "White" beer back from extinction in his native Hoegaarden later moving the brewing techniques to Austin, TX in the early 90's. After a series of unfortunate events, left the name "Celis" in limbo. However, the recipe and original yeast as well as the brewing techniques were still retained by his daughter, Christine Celis. Christine Celis is starting a new brewery (once again in Austin, TX) under the name Flemish Fox. Even more exciting the brewery is in the process of bringing the original brewing equipment from Hoegaarden.
