Cellar list - Age or Pull

    My wine locker recently reached capacity and I need to free up some space and was looking to the community to see if there are certain bottles I should just take out as aging them is either pointless, redundant or hurting the overall flavor. Any help is greatly appreciated, Thanks!

    Damn that's a long list.

    I've had Abraxas and Bomb when fresh, and I don't think I'd age those beers - the coffee, chili, cinnamon flavors are what make those beers, so I wouldn't want them to fade.

    I was going to say the exact same thing. The coffee can also change flavor a bit and give a Pepper flavor over time.

    Black Butte 24, 25 and 26 - Especially if you have two 25 and 26. I have back to 23 and just pulled them up from the cellar - was recently advised the 23 has fallen off and the others aren't far behind.

    I will probably wait and pull the 16 abraxas just because I have a 15 and 16 in my in home "cellar" already, maybe pull it in the summer when I'm missing that style the most. Didn't know about Black Butte will definitely pull extras of those. Seems to be similar to Abyss I find that hits it's sweet spot at 2-3 years and beyond 4 years I don't find agreeable

    I've in general come to the conclusion that most Stouts don't really improve past 3 years or so, and many are better fresh.

    I've switched to only adding Barleywines and Belgian Darks to my cellar (I don't really drink sours).

    I'd pull all the Velvet Merkin, KBS, and all the Prairie. I'd probably pull Prop as well (or just trade it and DIY with a french press + BCBS).

    I'd pull Baptista soon, but I enjoyed its spice profile fresh.

    I know I thought about changing it recently when I dropped some 3F into my cellar but than I remembered I'm lazy and I know what it means

    Yeah I'm figuring out what I want to do with the Prop 14, frankly I had it side by side with Desperado and I preferred Desperado. Best scenario is package it and upgrade to have 13 one more time or something similar. I will probably pull KBS and Prairie slowly as needed over the year just because I still have 5-6 bottles each and I still have too much VM at my house to drink (2-3 bottles). I really just need to cut back on bottles in general. Same with Baptista I still have 2 at home so figured I would see what a year did to it.

    IMO if you are trying to "free up space" I'd drink / off the following

    Sierra
    Founders
    Evil Twin
    Epic
    Smog City
    Prairie
    Firestone Walker (hold onto your favorites & parabola vert)

    That should open some more space for you but if you feel the need to let go of any Cantillon, Bottle Logic, Fremont, Hanger 24 I along with many would be interested.

    This looks more like a 'look what I have' than a 'what should I open' list. Honestly with your collection you should already have some serious ideas on what you should open and what should wait unless you're just buying beers to buy them because it's cool. I think anyone dropping that kind of money should have a very good understanding of cellaring beforehand.

    Anything with flavoring would be gone by now if that was my cellar. Spices, chiles, vanilla, and coffee fade fast, and coffee throws shitty flavors as it oxidizes. One beer I would also pull strictly off of how goddamned good it is fresh is DBBBB. That beer is amazeballs right now.
    But seriously, anyone with a cellar like that knows this.

    I would focus on the stouts with adjuncts, as they will fall off the quickest. You have a lot in this category so that should get you started

    I feel bad for someone that collects this much beer...and doesn't personally know which to drink...sort of a waste. I've got more than this, and just have two cases that are in the 'drink me' category...don't know anyone else that's informed with this problem. Not trying to be a dick, but that's my two cents.

    Had a '14 Black Tuesday recently and, while it was certainly still great, you could tell it had been sitting because there was a bit of oxidative quality that wasn't complementing the rest of the flavor profile well. I would drink that one.

    I also had a Deschutes BBP XXIV that was part of a vertical and it was not as good as when fresh for sure. Oxidized and the adjuncts were muted. I can't remember what the other vintages were and how they tasted because that was the only one that stuck out in my mind due to the fact that it was the only one I'd had prior to the tasting, so I was able to compare it to my notes from when I reviewed it.

    I've had BA Narwhal with a year on it and it was just as good, if not better, than when fresh.

    I have a '15 BA Speedway that I plan on drinking sometime soon and can report back here when I do. Same with '14 BCBS but, given that beer's track record for how well it ages, I think you can assuredly let that one ride.

    Oh and I had '15 Fremont CCBA Abominable recently and it was absolutely disgusting, so you should probably just go ahead and send that one to me. Wouldn't want you to have to go through the horror of drinking it @Javier2000 :slight_smile:

    Not saying it's necessarily the case here, but looking at some of the banter here in the forums - it seems like some people go on huge buying sprees before they consider - "oh shit, can I really drink all of this when it's at its peak?"

    With that kind of list, you're going to have trouble drinking any kind of exhaustive list of recommendations 'now' lol.

    I have to pile on the Prairie BOMB!s--tastes like shit aged, even after a mere 6 months. However, fresh, it's one of the best mole stouts out there.

    All the sours will be fine, if not better and better with time. Although I've heard it's worth it to try some of the Cantillons fresh if you have multiples, which it doesn't look like you do, so you can be patient.

    Um, need any help with any of that??? (Pug Royale, FO, VR :stuck_out_tongue: )

    I just had 3 Narwhal (14-16) the other night and thought it was becoming better as it got older. A lot of the bitterness from the roast turning sweet at the '14 mark, so I wouldn't not cellar past 3 years.

    As many others have said, I would recommend pulling any Mexican spiced stouts. I had a 1 year old BBIMM and it was super sweet up front, super hot in the finish. Lost all semblance of a balance of flavors, I didn't care for it at all at that point.

    Speaking of which- what happens to all that beer if you go before it does?
    I hope you have thirsty relatives.

    But, for real- what's the point of hoarding that many expensive beers?
