Im fairly new to cellaring beer, only having been acquiring for about 3 months now. Ive got a few brews which i think will hold up well with time, but would like some outside opinion on which beers i should keep, or pull, as well as how long certian ones should age for, new beers to add, etc. The current list is as follows: Boulevard Aztec Chocolate Stout Boulevard Bourbon Barrel Quad Boulevard Rye on Rye Boulevard Dark Truth Schlafly Bourbon Barrel Stout Expedition Stout Stone Xocoveza 4 Hands Bourbon Barrel Aged Bona Fide RIS Goose Island BCBS Firestone Walker XIX Anniversary Mothers Brewing MILF Stone Quingenti Milliltre Xocoveza Charred Logboat Alien Gold Avery Vanilla Bean Stout Avery Rumpkin Unita Port O Call Unita Cockeyed Cooper Planned additions include: Avery Tweak Avery Uncle Jacob Stout Ommegang Barrel Aged Three Philosophers Logboat Barrel Aged Wheat Porter Founders KBS Are there any that i should not plan on sitting on? Any recommendations on what to add or how long to age certain ones? Any and all advice would be greatly appreciated.
I wouldn't recommend KBS. In my personal experience, that beer falls off hard with even a year on it. Tweak is a tricky one. On one hand, coffee flavors tend to fade. On the other, it's a monster booze bomb fresh.
I would not suggest aging Imperial Stout X - Aztec Chocolate as the chocolate/cinnamon/pepper character will only fade with time. If you haven't enjoyed the others fresh, I'd suggest enjoying them fresh before deciding to age. This may sound a bit broken record-ish, but we believe in releasing beers that are ready to drink. With our barrel aged releases, we've done the work of aging the beer for you.

Ok, the Xocoveza and Aztec Chocolate have been pulled. With all beers, i buy enough to try at least one and take extensive tasting notes before cellaring. Today, i was gifted a 2015 Helldorado, 2015 Sticky Monkee, 2015 Velvet Merkin, and a 2014 Double DBA to add to the collection. Cellar or no?
OP, IMO for any beer I think you need to try it fresh in the first instance at least once. You need to establish a baseline for each beer and here fresh is best. Assuming you've had each of the above fresh at least once, I'd sit on the Expedition Stout for at least 2-3 years. IMO after about that time it turns into something special which seems to get better year after year. Such a great stout to age. Generally I drink any coffee stout asap since I'm really after as much coffee flavor as possible. Although BCBCS seems to hold up pretty well coffee-wise over time, the '15 version notwithstanding of course.
