Cellar Pictures Vol 1

    The boxes are all home brew imperial stouts, brett saisons, sours, wines and meads.

    My beer freezer. The bottom two shelves are reenforced with a board. The top one is actually two shelves, and has worked pretty good so far. Due to the slant at the bottom of the freezer (behind the fullers vintage) it's packed with cork and cage bottles stored on a slant. The black cable in the top middle of the picture is one of two temperature probes, one at the top and one at the bottom of the freezer. The probes are plugged into a digital thermometer outside the freezer. Looks like I need to start drinking... more.

    My "cellar" is just one full case and a bunch of four packs/750's jammed into a basement closet

    At least 14 of those bottles have been shared with friends in the last week. On average, probably 4 times a week I'll crack something from that stash.

    I'm in the camp that the waxing is not really necessary for aging but it does not hurt of course. Way I see it, is that it is simply an extra precaution - perhaps if they were to fall over and the cap be loosened in some way.

    On topic, I commend you cellarers, I don't think I have the willpower to build up a collection like some of these.

    all these cellars make me sad, but i just started last week (besides the Chimay which has been sitting a couple months)...guess we all gotta start somewhere

    There are no basements where I live, and it gets crazy hot, so I'm basically limited to what I can fit in these two wine fridges.

    Late to the party but here's mine after about a year or so of cellaring.

    The fridge holds about 40-50 bottles I presume, the rest are in boxes next to it covered up along with homebrew and homebrew equipment as you can see from the pictures. Replaced all the wine racks with a single piece of MDF for the center shelf.

    How does the Weasel hold up? I haven't had one fresh or aged....is it worth buying 2?
