Cellar temp help...

    I just picked up an old vinotemp fridge to cellar my beers in an apartment. The unit has five shelves, each holding 20-30 beers (depending on bottle size). The problem is, the bottle shelves are running about 53, mid shelves are 56 and the top shelf is at 60.

    My question is, should I :

    A) Store high ABV BA stouts at the 60 and sours at the cooler 53 or

    B) store the sours at 60 and store the High ABV BA stouts at 53 or

    C) doesn't matter at all?

    Higher the ABV, higher the temp. Stouts are totally fine around 60 degrees.

    Generally speaking higher ABV can handle higher temps. In the range you are in, the effects of these differences on the beer will be very minor between top and bottom. I would make sure to monitor your humidity as well.

    Bottom is ideal, mid OK for lambics, if those are your sours.

    Stouts will be fine at 60. Not really into sours so I can't comment on those.

    You are way overthinking this.

    Avoid light.

    Avoid heat.

    agree and keep the temp consistent, my paved crawlspace never gets above 70 and has worked just fine for years
