Cellar Temperature

    I'm currently storing my beer in a basement closet that stays around 60-65 degrees year round. I'm not able to purchase a fridge or any sort of additional storage unit and that's the coldest the basement gets even in the winter. Most of the beers in there I will drink within a year or two and I'm not too worried about those. I am worried about some beers I've had for a while that I was hoping to sit on for a total of about 5 years. Will the high temperature affect them alot or will they be ok since it is a constant and dark environment?

    They should be fine, but they will definitely age faster than at 55F. Your 5 years at 65F may be closer to 8 years at 55F. I have absolutely no scientific basis to back up this comparison; it's simply anecdotal evidence. 1 year of hot storage for a beer tasted like 3 years in cellar temps.

    The beers will be just fine. Don't buy into the climate-controlled cellar hype that seems to preoccupy some folks.

    Out of curiosity, what are the beers that you're holding out 5+ years for?

    I cellar most of my beers at 45 degrees although I have cellared some in my closet which is closer to 60-65 and find they are good after a year or so but as for lenghty cellaring if you are serious about it I would purchase a temperature controlled fridge as I found a good one on wayfair.com delivered to my door for $230 and have been using it for coming up on 2 years and it works great steady at 45-50 depending on where in the fridge and holds about 45 bombers and some small ones in the front lol

    I'm holding on to last years and this years bcbs and kbs. I'm hoping to assemble a 5 year verticle to see how they change with age on them.

    I would love to do that but I'm staying with someone right now until I get my own place. I'd feel bad taking up a bunch of their room with a fridge!
