Founder's-Imperial Stout is amazing after 1 year!!

This makes a lot of sense. Very hot fresh.

 

Black Albert at 3 years was the best stout I have had. I was expecting a monster, but it was perfectly balanced with oxidation character, dark fruit and roast. No American hops are used so the cardboard flavour was non existent.

 

Have you aged BA Narwhal? I'm guessing it ages well, but looking for real world reference

 

Never even had BA narwhal, so I can't comment.

 

I dont know how this hasnt made the list yet, but Black Tuesday. 2-3 years definitely does this beer sooo much good. Mellows out the heat and lessens the sweetness

 

I thought cardboard flavor was caused by oxidation?

 

Oxidation of... iso-alpha acids from hops and fatty acids from malt.

 

I just had a year old Weyerbacher Tiny. First time I tried this aged and really liked it. Very smooth and tasty. It's available year round and not expensive. I would add this to the list of being worth aging.

 

I gotta agree. When you consider the abv, the price, the availability, and of course, the flavor, this is a remarkable beer. When you factor in it holds up well, this is a must have for anyone looking to cellar beers low cost, low fuss.

 

This needs to be resurrected.

My vote goes for stone RIS and cc Marshall Zhukov. They get mellow and creamy with time.

Still waiting to try a few on this list that are still sitting in my cellar.

+1 Ten Fidy, in a can, 1.5 years old, tasted very good. Haven't had it fresh.
+1 had a 6 month old breakfast stout home brew I helped make in a class at the local brew store. Apparently the consensus of the customers/staff was the brew wasn't very good when it was first ready to drink. So I guess they stopped drinking it. I happened to stop by the store 6 months after the class, and there was still some left in the keg. It tasted great, I guess the coffee had mellowed a lot. (But this probably won't count toward this list :-).

BTW, on the question about Parabola, did tbadiuk actually like Parabola before he started aging it? I actually (horrors) don't like some particular stouts when fresh, and suspect I still won't like them when they are aged :-). I don't expect miracles from the aging process.
