Cellarable Goose Island...

    In my basement, I have 2011 BCBS, King Henry, Nightstalker, Big John, Lolita, Juliet, and now Madame Rose. All of the labels say the same thing, "cellar up to 5 years".

    Besides the BCBS, what are your opinions on the others' cellarability? How do you think time will affect these beers (for better or worse)? I have my own assumptions, but I want your feedback...

    Agree with King Henry being drank sooner rather than later, it's just soo good now that I can't imagine it getting better. Personally I feel that Big John has gotten richer and creamier with time and Night stalker, when fresh, tastes like hopped up black ink but with a year or so on it, it becomes a much more pleasant beast for me. Personally don't have any experience with cellaring the three sisters, like those too much fresh to sit on them.

    i really like night stalker w a year or two on it. KH was phenomenal fresh, is apparently great now, but if i was sitting on a bottle (i'm not), i'd age it as long as willpower allowed. i really think it will develop into something sublime.

    I also thought night stalker was great with at least a year on it.

    The hops in Night Stalker will fade out.

    The sours all age well. I've got Lolita, Juliet and Madame Rose all sitting in my cellar. They do lose a little fruit, but they get deliciously tart. Although I did find there was a funny period for the Lolita about 6 months in where the fruit had faded but the wild yeast hadn't kicked up the sourness yet, so the beer had strangely prominent caramel malt notes. I'd recommend drinking fresh for fruit or age at least one year for tart.

    Had a year old Matilda and it was quite tasty, albeit a tad soapy. Still sitting on a 2011 Sofie since I loved it fresh but thought some time in the cellar would really allow the more subtle flavors to develop and shine... we'll see!

    This year I bought enough Lolita and Juliet to actually crack one bottle every year for five years. I was only able to get 4 Madame Roses, but still enough to gauge how well they all Three Sisters age. We shall see...

    Batch 1 of Juliet was just okay when we opened in in May. The 10' bottles are doing nice right now IMO.

    Opened a '10 Nightstalker last weekend and everyone agreed it was awesome. The hops have faded quite a bit, but i tend to like my imperial stouts on the sweeter side. I also really enjoyed the 2009 Matilda I had a few months back.
