Cellaring Advice

    Hi everyone, I've recently starting picking up BA beers and 'rare-ish' bottles to age or drink. I'm just not sure which beers will be better with age and how long to sit on them. I'm a total noob to cellaring, I just see that everyone ages BA Stouts and some barleywines and sours. Here's my list. All are 2011 or 2012 obviously.

    Fifty-fifty Eclipse Four Roses
    Port Old Viscosity
    Port Older Viscosity
    DFH WWS
    SN Bigfoot 2012
    Founders Backwoods Bastard
    Founder Imperial Stout
    Jolly Pumpkin La Roja
    Great Divide Expresso Oak Aged Yeti

    The coffee flavors and aroma in the Expresso Yeti will fade with time. IMO that's one of the best things about that beer. The others should age pretty well though.

    Everyone will have a different opinion on this, but here's my take:
    bigfoot gets better for 6-8 years
    I love DFH WWS with about 6 years on it
    oak yeti, you'll lose the coffee and oak flavors over time so if thats what you're going for go for it.
    Four roses, again will probably lose some bourbon and some oak, but like I said personal preference.
    Founders imperial and la roja will probably do well too
    A lot depends on cellaring conditions too. At the end of the day you never really know what you'll end up with on a lot of beers, that said I have had excellent experience with was and bigfoot (and backwoods for that matter) and I currently have about 6 DFH WWS from 09 aging and 6 bigfoot 2010, and 8 bigfoot 2011, (soon to ad 8 2012s too)
