Cellaring/Aging Beer after its been cooled

    Can you cellar/age a beer that has already been chilled, to say 40-45 degrees, with the same or similar results as having aged a beer that was not chilled? And does the same go for bottle conditioned beers? I know theres live yeast remaining in bottle conditioned beers, but does the cold kill the yeast and in turn kill the prospects of aging a once cold beer?

    As long as it rises gradually in temperature and never sees extreme heat, temp changes are fine.

    Would an imperial stout such as FBS or Terrapin W-N-B have it's character/taste compromised by putting it in the refrigerator for a couple of weeks or a month and then taking it out and cellaring it?

    I am a devout IPA/IIPA/DIPA guy but am starting to slowly cellar a few things here and there and am wondering if my small collection of stout that's been in the fridge for a little while will still be ok if I take it out.

    It'll be fine. It probably went through a few temperature changes before you even bought it. But IMO, just drink that shit now. FBS won't get any better, and I doubt W-N-B will either. Besides, spring is quickly approaching, and they taste much better in the cold weather.

    No. Refrigeration just slows down the aging process. You would be fine taking it from the fridge to the cellar.

    Although FBS is better drank fresh otherwise you will lose most of that delicious coffee flavor.

    Will be OK. Wild temp swings back and forth should be avoided, but what you are suggesting should be fine. I always found that exposure to light is much worse than temp swings.

    The way I see it, the refrigeration would more than likely help to preserve the beer. So, no. I believe it should have no effect, much unlike leaving in a hot trunk for a half a day, which would have a horrible effect.

    Luckily, this year has been a cold one so far, so it's very likely that this is complete non issue. But, as spring gets into being with us again and heads towards summer, etc. The beer will start to go through more temperature variations in the distributorship channels to get to your bottle shop than it ever could by you moving it to from your fridge to your cellar.
