Cellaring Almanac Sours

    I've recently fell in love with Almanac Beer Co. and thier great selection of sours. I've been more of a stout guy and I feel I have a good handle on how a fresh stout will change over the years. Sours on the other hand are new waters for me. What I have been doing is is buy three of each as they come out. I drink one fresh and through the other two in the cellar.

    My question is when should I open the other two?
    Compared to other sours similar in flavor should I open the second one in 6 months, 1 year, even longer?
    Will the flavors like Blueberry, Apricots and Strawberry in these Almanac beers fade overtime?

    I know everybody has their own personal preference. I'm more just looking for some guidelines. Last thing I want to do is open a bottle up too early or hold on to one too late.

    I'm in the same boat. Thus far I've only bought one of each, but I found bottles of Valley of the Heart's Delight, and I just had to buy 2. I had it on tap in the city (that's 1), and I'll drink one of the 2 bottles soon. The other I threw into the cellar. Wondering how it will be in a year.

    I'm a huge Almanac *****. I'll tell you they keep very well! I keep one for a year, then open another at 2 years.

    @CraftFan5 Valley of the heart's delight was soooooo goood! Damn north jersey stores all did 1 per bottle

    I didn't even see any bottles in NYC; as far as I know it was only on tap. Luckily I found a few in Westchester.
