Cellaring an already "aged" beer

    I just picked up some 2014 Sofie at a local shop. I've heard of getting at least 24 months on it. My question is how would you start your clock on that. Should it be the bottle date (05/09/14) or the cellar date (01/20/16)?

    It's by the bottle date typically. Unless it was in like a really cold fridge at the place you picked it up from. Then just start the "cellaring" right then.

    That being said, I had a non-aged sofie recently... pretty awful xD

    That's what I figured but thought I'd ask...I actually quite like them fresh, but I want to try them aged too.
