I have a 2011 vintage, and I am wondering how long it will hold/grow in cellaring.
I'm thinking of putting it away until 2020 -- any thoughts on that?
    Good idea or not?

    Cheers!

Saint Bon-Chien is possibly one of the best beers I've had. I still have some bottles of the 06 left and it's outstanding. It's a great beer fresh but I feel it gains more complexity and becomes more sherry-like as it ages. Go buy 2 more - drink one now, one in 2 years and regret not buying 7 more because you'll want to keep drinking them as they get older. Either way, enjoy it!
