Cellaring Cascade Sours

    I have a few different Cascade sours that I've had fresh and was wondering how these would hold up with some age on them.

    Sang Noir
    Sang Royal
    The Vine
    Figaro
    Cerise Nouveau
    Noyaux

    I reckon that they'd all be very cellarable but the problem is.....who can wait, knowing they have bottles of Cascade in their cellar. I'm a big failure with this.:wink:

    Cascade says you should have the Cerise Nouveau fresh but I don't know.

    Anything with fruit will lose fruit character over time, so it's really up to personal preference. Since these aren't brett-sours, you won't add a whole lot of complexity/dryness with age like you would with a lambic; maybe some more acidity but that's the only major thing. I've had some them right after bottling and about a year out and didn't notice a big difference so my personal preference is to drink them as soon as the occasion arrises. I don't think their beers gain anything worth the wait and are often plenty sour from the get go.

    I keep all of mine in the fridge and consume them with no intention of cellaring them, but then again I like more fruit forward sours.

    I'll probably cellar a few Vlads though.

    I agree with these two posts. I would think Vlad & Bourbonic would cellar well, just don't age Blueberry. :wink:

    Agreed. The blueberry in batch 1 went awfully quickly and the base beer is nothing to write home about.

    I have a Sang Noir that I've laid down for a year and was wondering the same, maybe I'll try a comparison if I can find another bottle.

    Any thoughts on cellaring the Kriek?
