Cellaring Experiment Gone Right: Devil Dancer

    Just cracked a '10 - '12 Devil Dancer mini-vert tonight. The '10 was a bona fide amazing barleywine! The onion flavor of the '11 worked itself out with a year + on it and tastes great, a bit boozy still, but more like a complex and terrific high ABV bwine. And the hops have relaxed just a smidge on the '12 -- wish I had kept a couple more '12's in the cellar to repeat the experiment.

    Anyways, I always wanted to see how these guys evolved and tonight was the night...I have a vert of Double Crooked Tree hanging out in the cellar as well...awesome to see what time does to high ABV IIPAs (and triple IPAs)! Anyone else have similar experiences??

    I love Devil Dancer with 2+ years on it and am waiting for Double Crooked Tree to age patiently.

    Left Hand Chainsaw. If you didn't already know it's brewed every other year. I saved one from '10 and drank it next to one that came out last year. Absolutely fantastic. My buddy and I were floored at how good it tasted, since cellaring it was an accident. Just forgot I had it.

    But Devil Dancer is one I always say I'm gonna sit on but it's just so dang hard to get more than a bottle or 2 where I am, so I just end up drinking whatever I get. Willpower this year. And I actually scored a 4 pack of Double Crooked last week and already put one away. Never have had an aged one. For some reason it's plentiful this year so I'll probably grab another 4 pk and put 'em all away.
