Cellaring Flavored Stouts (ex. proprietors)

    I have heard mixed things about cellaring a beer like proprietors. Some people say it will smooth out, some say all the coconut flavor will disappear, and some say that the coconut is already falling off. It seems that Bourbon County Vanilla still has crazy trade value as well as vanilla dark lord. People have told me that the vanilla flavor would be completely gone at this point. I did some searching for this topic but couldn't find any solid answers. So the question to the community is whether or not flavors fall off over time? Will my props just be regular bcs in two years? Will Backyard not taste like fruit? Will Victory at sea just taste like a regular porter? Or, do I have my panties in a bunch worrying about my beer and I don't need to?

    They do. The answers to all of your questions is basically yes. Some of the flavor might linger for a while, but it is very likely that your proprieter's will taste very much like regular BCBS in a couple of years. If you haven't drank the beer before, it's best to try it while all of the adjunct goodness intended by the brewer is still there. You'll never know if fresh is too much for your taste without trying it fresh.

    Thanks for the reply. Luckily I had one fresh. I guess I have a few things in the wine chiller that should get consumed sooner than later. It's going to be a solid couple of weekends! Flavored stouts here we come!

    If fresh was to your liking, then absolutely drink them fresh. You could lay one down for a while, but unless you would prefer less coconut flavor, there is no reason to.

    Victory at Sea has an expiration date on it. fyi. I believe its a year after its been bottled. Coffee is one of those flavors that disappears pretty quickly.

    Bramble was still fruity after a year or two, so I don't think backyard will lose it's flavor that quickly. Jammy fruit flavors seem to stick around.

    Proprietor's: Goose Island said not to age it. That the coconut flavor will fade. Also, I've already opened one of my proprietor's bottles and I can say that its smooth as silk right now.

    When I last tried proprietors in late February, the coconut flavor was nearly gone, but the beer was sublime. Smoothest by far of all the variants. I've read all over that GI said not to age, yet their bottles say to age, up to five years, what the H?

    Agreed with you comments on BCBVS...everyone said the vanilla would be gone, had one a week or so ago and still worth every last drop IMO. As for Prop, it may fall off but who knows what'll happen in that bottle. I have one I'm saving and the way I look at it, worst case scenario I end up with an aged bomber bourbon county...tough loss. Best case scenario it turns out to still be an amazing brew.
