    Yay or nay? Got a bottle on sale, will probably hold onto it for thanksgiving. What would happen if I let it sit for a couple of years? I had it both on draft and from the bottle when it came out, was not completely enthralled by it, but willing to give it another shot.

    I assume you will most likely get more tartness from the raspberries and a mellowed out chocolate feel on it. I've had it fresh from the bottle and on draft, but have one bottle left and plan to give it a full year before I open it just to see if/how its changed. TBH, I enjoyed the balance on this fresh, but my last bottle is just going to be an experiment...for scientific reasons :wink:

    I actually opened a 2014 recently. Bought it around Christmas last year so 2/3-ish of a year's age on it...

    Anyways, I'd probably age it again and recommend serving it as a dessert. Before I even opened it, I planned to pair it with the fresh raspberries and I'm happy I did. To me, the beer alone was all chocolate through the tasting with some candied raspberries in the finish. The nose was still pretty balanced with chocolate and raspberries and the body was still full. However, the beer was entirely over sweet for me. So, the fresh raspberries brought some much needed balance.

    I should also mention that I've never had this fresh, so both of you will have a reference point that I lack.

    I believe the fruit should fall out as it ages, while the chocolate comes out a bit more. That is assuming you keep it out of the fridge.
