Cellaring fruit Lambics, like Hommage

    Maybe this has already been covered? I hear that Framboise Lambics tend to get Undrinkably sour with age.

    Is that true across the board? Has anyone had experience with aged Hommage, Framboos, Intense Red, LPF, etc? How'd it compare to the sourness of the fresh stuff?

    The intense souring has more to do with the lambic itself, and less with the fruit additions. What you will typically find with any fruited beer is that over time, the fruit flavor will fade. I drank an '07 LPF in 2014, and while it still had a lot of raspberry on the nose, it was overwhelmed by the sourness as it warmed. Don't get me wrong, it was still very good, but it was clearly not within the level of balance that the brewers intended.
