Cellaring Hill Farmstead

    I wasn't able to find much on the forum about this - what are people's experiences cellaring Hill Farmstead stuff? For example - Everett, Clara, Civil Disobedience?

    It's all a matter of opinion.
    Typically the intention of most brewers is for their product to be enjoyed fresh.
    I hear "I really wish I would have drank this fresh" or "It's a shell of itself" more than "I really wished I would have sat on this for a few years"

    Here are my experiences:

    Everett: I've had it with 1 year on it. It gets smoother (roastiness dies down). I wouldn't say it's better, just different.
    Arthur: Arthur with a year seems to get more of a yeasty saison quality to it. I prefer the crisp, tart fresh taste over aged.
    Birth of Tragedy: I never had this fresh, but a friend gave me a batch 1 recently. Oh my god it was amazing. I'm sure it was amazing fresh too.

    I think those are the only aged HF beers I've had. Personally, their beer is so incredible fresh that I don't think I'd cellar it. Although, I do have a Norma b2 cellared, but I'm just waiting for the right time to open it with someone who will appreciate it.

    I've routinely put 3-4 months on the saisons (Arthur, Florence, Grassroots bottles) and feel like they get a little tarter. Perhaps that's just psychosomatic. Anyway, have enjoyed that. Do not have the self-control to cellar much longer.

    All of the saisons, to me, peak at about 4-6 months old. They do seem slightly more tart after some time, which is great. Juicy was the one that I thought was as good as ever fresh. I still loved it with 6 months too, but it was unreal fresh. To be perfectly honest, I've never tried aging any of the saisons more than 4-6 months. Somehow I just end up drinking them before "aging" ever comes into my mind. Odd...

    I have a bottle of Everett from last summer, haven't opened it yet though. Will likely have that and a fresh bottle at some point to compare them. Or, maybe I'll wait till next summer and try a 3-year vertical?

    I was thinking Everett was probably safe and interesting for at least a year and the same with Civil Disobedience (or more). But maybe a year or more is too aggressive for the latter. My gut feeling with Clara was probably drink within the first few months, which seems to be the consensus.

    I personally love their saisons with 3-4 months on them, and most of their stouts/porters seem to hold up very well. My all-time favorite is Anna aged. I can't wait to open my last bottle from 2012 soon!

    My only experience is Anna with about 7 months on it. It was very noticeably tarter than it was fresh. Was much better fresh, the tartness was all out of balance with the rest of the beer. Fresh it was delcious.
