What are the thoughts on cellaring hipster brunch I've heard people say that due to the fat in the bacon it won't seller very well.

No one knows as it has never been made before. With that said, it tastes perfect right now so why cellar it? Maybe throw it in the fridge so it slows the aging process. Just my $0.02.

Have you tried it? I can't imagine what you would be looking to gain by aging this one. It's not like the thing is too hot right now.

I know it has never been made before, I have a good amount to drink now and agree it is very tasty. But I could also spare a few to age so was just curious.

In my experience, the Odd Side barrel aged stuff falls off pretty quickly and shouldn't be aged

Different base beer and aging process for BBA Imperial Mayan and Hipster than their previous aged stuff (BBA regular Mayan and Morning Wood) though.

I personally would love to keep some of my BBA Imperial and Hipster around long enough to enjoy occasionally throughout the next year, but I only picked up two cases of BBA Imperial and one of Hipster and I just can't stop drinking them (and will probably have to start looking for some BBA Imperial to trade for soon).

I feel I need to run about a mile for every one consumed.. but that's a good thing right..

I picked up a case last week so I'll be working on it for a while. I only drink a bba stout about once a week. I love them but they are just too much for me to have any more than that. So I will be cellaring some by default. If I start to notice them turning bad, I'll pick up the pace and/or share with friends.

Make no mistake about it. Hipster Brunch is one fine beer. I definitely have it in my top five.

Poor man's CBS. I give Odd Side credit for taking some chances and making some solid brews. Founders on the other hand...

If you have too many and are looking to do something with them....trade them to me. I'll send you some New Glarus to cellar.

I asked the guys at Oddside about this and they didn't think there would any issues. One of the brewers(Russ I believe) actually thought it would age nicely as long as you could resist drinking it.

Haha, I traded or gave away about a half case of my Imperial and will be giving away 4 to 8 of my Hipsters, but your point still stands. About 55 bottles of the two and thinking about looking for more Imperial is kind of ridiculous. Oh well.
