Cellaring Lagunitas Sumpin Wild

    I'm not a "cellaring IPAs" kinda guy, but I'm definitely an "affordable cellar experiments" kinda guy. My suggestion: set a couple aside and report back in 6 months in one of the cellar review threads, then again after a year.

    Why do you want to cellar this beer? What do you hope to gain from cellaring this beer?

    Answer these two questions before you cellar anything.

    Cellaring will allow the hops to drop off and the yeast to come even more to the forefront. Personally I did not like the yeast profile all that much, would not be crazy about it becoming more dominant. I personally would not cellar any.

    If it actually was "wild" I might but I don't see the westmalle(I think that's what they used) strain doing much to that beer.

    they used the "wild" name before "wild ales" really started exploding on the market (pun partially intended). they meant it as in they "did something wild" by using a very traditional Belgian trappist yeast to make an IPA. however I did age some....since I forget about 2 bombers. better fresh. now some of their other big "IPA's" like brown sugga, hairy eyeball and such, actually do hold up pretty well and get some interesting things going on when the hops have died back a bit

    Wild ales were popular when the beer was introduced. I remember seeing this same exact question a lot when it came out.

    "I really wasn't into sour/wilds then so I didn't notice the popularity of the style" Only thing "wild" I can remember from back then was Wild Devil
