Cellaring question

    I've been keeping a bottle of Parabola on my desk for the last couple weeks and it occurred to me that it's probably a bit too hot in my room to keep there. I want to age it for a year but I don't have a proper cellar to do so. Should I plop it in the fridge? Has there already been damage done by keeping it out?

    First recommendation, read through the cellaring forum. This question comes up frequently.

    Your Parabola is fine. Beers sit out on the shelves at beer shops for more than a couple weeks at a time.

    As for the fridge v room temp question, your beer will age more slowly in the refrigerator. At the higher temperature, your beer will evolve more quickly, but this will also speed up negative reactions (which occur more frequently at higher temperatures). For a year, your beer should be fine at room temperature (around 70), but make sure it is not exposed to light. Light is the larger worry for short-term aging.

    If you are going to keep it for a year, it would probably be better to keep it in the fridge. You could also consider putting it in a dark spot in your closet if you don't want to keep it in the fridge.
