Cellaring Southern Tier 2XMAS?

    I bought my first six pack of 2XMAS this year and I can't say the beer does a lot for me. It tastes like Ginger Snap cookies and the spicing is just too forward.

    I'm wondering if cellaring the 5 bottles until next year would mellow it a bit?

    I'm interested in this as well. Though, I wouldn't save all 5 of your bottles. If you don't like it this year don't think things will change much for next year. Gonna save one or two bottles to try next year. Love this beer and the spices are perfect for me. Tried a year old Pumking and it really smoothed out.

    Anyone have experience cellaring 2XMAS?

    First off, I personally wouldn't choose to age a Christmas beer. I just can't see how it could possibly improve with time. Second, I don't see why you would want to age a beer that you don't even like fresh. If I were you, I'd just accept that I bought a 6-pack that I'm not find of. And give the other 5 bottles to your friends if you can't stand to drink them.

    I bought a 6 pack last year & was not a fan. I saved a few to experiment & opened one up this year & it was worse. The spices were still over the top (in an old dusty way), but the sweetness had diminished & was just overall less balanced & less enjoyable. So, if you don't like it now, you're really not going to like it later.
