Cellaring temp question

    I know on the beer 101 info. it says around 55 or so is a good temp for the higher alcohol brews. I just returned from California and was able to pick up a big bottle of Speedway Stout that's been in my fridge for about a month now. I've been saving it to split with a BA pal of mine, but it's summer and hot in MD and neither of us are really interested in busting that bottle open anytime soon. Maybe a cool fall day is when its time. My dark basement stays around 65-68 in the summer...probably 58-60 in the winter. Is 65-68 too warm to cellar it and should I just keep it in the fridge instead? Will it deteriorate in flavor if kept in a cold fridge for several more months?

    Mmmm. 65-68 seems a bit warm. If you have the room just keep it in the fridge. The temps will be lower in there but it will be a constant low temp.

    Sorry about the double post. As long as you are keeping the bottle out of direct sunlight and at a constant temp the taste should not be affected.

    Cold will preserve the flavor. I think 68 is fine, that's where mine gets and I'm not too worried. If you want to go for 10 years it might be a problem.

    I recently moved. My cellar back home was ~300 bottles in a concrete temperature controlled closet. While my rarer bottles are still there, I have chosen a small little closet as my new cellar. I put nothing valuable in there, but it is probably 75deg+ year round.

    Wanna know a secret? I cannot really tell a difference Had some Black Note, BCBS, even a Ba9K in there. When they were all drank, they tasted just like their temperature controlled brothers. Can I talk for anything other than stouts? No. But I don't think temperature matters that much unless it is in the range of 100deg. All warm temperature does is supposedly speed up the aging process. But, mine all tasted the same with some age on them.

    I'm just talking about 3-6 months so I know the flavor won't change too much in that short time, but wanted to make sure the warmer 68 degree temp wouldn't harm it at all. My wife probably would like some space back in the fridge since the big bottle has to lay on its side in there (the shelves aren't tall enough). If you guys think its safe I'll put it in the basement in the dark.
