Cellaring The Bruery's "White Oak"?

    First experience with a wheatwine hybrid. Anyone done it? Worth giving a shot?

    Save the cellar space and pour it down the sink! I hated the brew!

    I have a bottle down there right now--I liked the beer quite a bit fresh and I dont know how long the one in my cellar will last before it also gets opened. doesnt the back of the bottle say its suitable for cellaring only up to 2 years?

    I pulled out a year old bottle recently, and while I liked it, I think I prefer it fresher. The citrus notes of the mischief were subdued, bringing out more of a rounded sweetness from the white oak sap, and while I dont find fresh white oak to be very hot, the age had mellowed the booze allowing for more oak subtleties to come out, though the body had lost a touch of that great creaminess it has fresh.

    I will be opening a 2009 bottle this weekend, so I'll report back on that one later.

    I think it's definitely worth a shot. The flavors of White Oak when fresh didn't mesh well for me. I aged one for two years and found it more pleasant, though I actually wish I had waited another six months or year, as the flavors hadn't completely melded together yet.

    White Oak is a hot mess when opened fresh and i drain poured it the first time because of how boozy and sweet it was. If I had the chance to go back in time i would have aged this hope it mellowed out.

    I had the first batch after about a year and a half 2 years and I absolutely lived it. Habit again fresh when it was rereleased last year and hated it because of the fresh hop presence from the mischief and the sweetness/booziness. Revisited last week and it was much better but not to the level of the first batch so I can only say age can and will help from my experience.

    Thanks for the great feedback all! I'm truly torn but leaning toward aging. Looking forward to being able to weigh-in on the experience in the future.
