Cellaring Thoughts on this big haul....

    Hey Guys!

    So I just recently got hooked on this whole beer trading thing after moving to Portland and eventually being introduced to this site. I have been locking down deals left and right and have 10 packages in the mail already and am awaiting the 10 in return. Have filled a bunch of my wants already and now am curious as to which beers you guys recommend I drink sooner rather than later? I am in no rush to finish everything (as my initial investment was quite steep) but certainly would like advice to make sure I enjoy each beer to the fullest. Here is what I have coming my way (if there is no date specified, assume it is the newest release):

    The 09 Abyss infection varies from bottle to bottle. Just because you had one uninfected bottle doesn't mean the others aren't. Especially at this point in their age, you'd be lucky to get more uninfected bottles IMO.

    The KBS will lose some of what makes it great after about a year. I'd drink them sooner. Same goes with the Hunahpu's. While it's still delicious, I just drank my 2010 and the cinnamon and chiles are gone at this point.

    Here's the main thing though: Anything you haven't had before, drink it. What's the point in cellaring a beer if you don't know what it's going to evolve from fresh?

    Awesome man, thanks a bunch. I didn't think my other Abyss bottles would be infected since the 2 I have left are from the same Case of the one that I opened last week. Thanks for the info though!

    I'd drink all of those within the next year with the following exceptions:

    King Henry (1 bottle)
    Dark Horse BB Pt5th (1 bottle)
    Kuhnhenn BB 4th Dementia (1 Bottle)
    Black Tuesday (2 Bottle)
    FFF Dark Lord '10, '11, and '12 (after DL Day)
    Bruery Cuir (100% BA)
    BCBS (1 bottle)
    Westy 12 (if you have already had the beer)
    Mother of All Storms
    North Coast Old Stock CR '09

    It's up to you as to how long beyond a year you want to cellar the above.
