Cellaring withought refridgeration

    I guess they wouldn't call it cellaring if wasn't temperature controlled? I haven't invested in refridgeration for my beer. My collection is a little more than a year old. What should I expect if I keep this up? Will my beer age/oxydize faster? The beers in my collection range 8% and up in ABV. Any input reguarding the topic would be appreciated.

    What is the temp change like? Where are you keeping them?

    temp. is about 60 degrees in the morning/night and 75 degrees afternoon. I keep the in a bottom kitchen cabinet.

    The temp in your house fluctuates 15 degrees? Warmer temps just mean the liquids in the bottles are going to change faster as compared to being stored at around 55 degrees, in which case they will change/evolve slower

    My cellar is in an enclosed room under my basement stairs in complete darkness mid 50's in the winter and mid 60's in the summer. It has served me well.

    You'd be fine for a year, possibly two. I wouldn't age any barrel-aged stuff though - make room for those in your fridge.

    Another consideration would be a storage closet or an area that has tile or vinyl that will maintain a slightly cooler than ambient temp. I would worry about chemical spills or just plain water spills if it were stored where you have it. The biggest keys would be reducing fluctuations of temperature and reducing exposure to light.

    I have a similar problem, I live in a studio apartment and being from Louisiana I usually keep it pretty warm in there, about 70-75, even up to 80 on occasion. I really don't have the space for even a small fridge so I'm thinking I should just limit the length of time I cellar bottles.
