Cellarmaker to start bottling.

    @thuey I've only had the 3rd Anniversary batch so I can't comment on what on what it was like beforehand, but you're correct in saying this batch is not a juice bomb. The thing is, the 3rd anniversary batch got better over time and eventually became one of the most tropical fruit forward IPAs I've had in recent memory. It became absolutely delicious so I'm hoping this batch turns out the same way.

    I think this batch is still very young. I'm not opening a bottle for a day or two to let it rest and let any bottle shock calm down.

    On tap, I put it right between batch 2 and 3. 2 was SUPER haze, 3 was rather clear.

    I drank a pint over 30 minutes with a sampler of 6 others. Smell the Colors and Ottos jacket won the growler fills. DDobis would have got the fill for sure if allowed. It juicied up with a little time to lose some of that fizz.

    Hi guys. I'll be visiting SF in few weeks and I'm really looking forward to visit Cellarmaker. I recently started looking up some threads and it seems like the taproom is pretty packed most of the tme. I like drinking beers with lots of people, feeling the vibes and all stuffs. However I'll be visiting with my mother so I'm trying to get there when there are not many people. I will be really appreciated if anyone can let me know when is the best to visit if I want to sit down and drink. Cheers :slight_smile:

    Tues/Wed at 3p (opening time are good). Friday at noon (opening) is also decent and gives you two more time before the 4p rush

    Yeah, a lot of happy hours start at 4p in SF (although CM doesn't have one), so I've noticed that's when a lot more people start trickling in.

    I know that they collaborated with the Rare Barrel on three beers. Sounds like the will be released at RB and all of the beers will be available for growler fills. It looks like that event is slated for Feb. 12th. Also, RB has some legit tap takeovers during SF beer week; Trillium, Jester King and Wicked Weed.

    So has anyone opened up any bottles of Double Dobis recently? Opened one last night and some of the initial bitterness has started to subside. While there was some tropical fruit present, there was something else that I can't quite put a finger on that didn't do it for me. I have 4 more bottles so I'll open them up probably sooner rather than later but I have to say I think I'm inclined to stick to drinking their beer on draft (or from growler) if it's not Imperial C&C.

    Uh oh! I only picked up two bottles, but based on your comment, I'll have to crack one open tonight!

    That's interesting, because I held onto the first Double Dobis for 1 month'ish, and it held up pretty well. I know that beer was different though (hazy, juicy vs. West Coast dry).

    Yeah good point. I missed SFBW 16', but in 2015 their colab with RB was amazing. I would guess one will be similar -- super dry hopped golden sour.

    I had double dobis on tap this evening and I noticed some odd flavor in the background. Not necessarily bad but not something I picked up last time.

    No, I meant of the bottles I've consumed before Saturday night I thought the latest bottle has been the best. I have a couple more left so hopefully they'll keep getting better.

    Just cracked open my first bottle and had a pour. Pretty good stuff. I don't remember my draught pour on release 2 weeks ago enough to compare it directly... but it has that same essence: West Coast style DIPA, with a burst of bright citrus flavors.

    I tried to taste for any off-flavors, and maybe my palate isn't good enough, but to me it's tasting great. There is some bitterness on the back-end, and the typical DIPA reminder of alcohol. But otherwise, it's a hop forward beer with tons of fruity notes.

    I wouldn't consider Double Dobis to fall neatly into the west coast dipa category, which tend to be more bitter, drier, and less fruity. I think Pliny and Enjoy By embody the west coast spirit a bit more especially since the bitterness in those beers can last several weeks longer than the bitterness in DD which has already begun to subside.
