How well do beer (specifically stouts) with cherries in them handle aging? Is it like coffee or hops where it fades pretty quickly? Or does the flavor have some staying power?
    Better fresh, or with age?

Most things tend to smooth out with age. I was talking to a brewery rep for Goose Island not too long ago and he predicted that BCBS Cherry Rye would hold up well, estimating four years to its peak, in his opinion.

If you can, you can try to get two bottles...one for now, one for later.

Bell's Cherry Stout begins fading at about eight months. That's my only experience. It's still good but the cherry is really lacking.
