I did an Advanced Search and couldn't find any results about aging Prairie's Cherry Funk. Most of the reviewers said they wanted more funk, or more something. Could this get better with some time on it? Or is it just going to lose most of its traits?

I personally wanted more tartness and cherry overall (pretty let down by this one). I wouldn't bother sitting on any as I just didn't enjoy it fresh and don't see the missing elements improving with time, but maybe that's just me.

I was also underwhelmed by this beer but have found that funk definitely does grow in most of Prairie's beers. 'Merica wasn't produced again this year but we got more at my local shop just a few months ago (probably at least 15 months old by that point) and it had developed a cheesy funk. Not at all what I enjoyed from that beer fresh, but very interesting and good in its own right.

My rule of thumb is, if I didn't like it fresh, why waste to time and effort to age it? Plenty of great beers out there that I know I like and will continue to enjoy.

Rule of thumb exception - sour/funky beers

I put some of these at the bottom of my beer fridge. And while it down pain me sometimes to keep them there over new acquisitions...I keep them there. Will try in a year and so on and...prolly forget about this thread but try to report back.

Gonna buy two this weekend and put them in the back of my "cellar". For science.

It definitely is getting funkier. I've had about three, each a couple of months apart and it's developing into a nice tart beer. It's not overly cherry but I like it that way. They are there, especially in the nose.
