My brew buddy and I want to go for a Cherry Pale Ale this time around based on another recipe we've previously tried, but aren't sure about what we've come up with so far: 5Gal 3# Light DME 2.5# Rye Malt 2# Torrified Wheat .5# Carafoam .5# Melanoiden 1.5oz Centennial @ 60 1oz Cascade @ 15 WLP001 California Ale Yeast 5lbs crushed cherries pasteurized and put into secondary We are going for more a tart than sweet flavor balanced with the hops. Mostly the concern lies with the amount of cherries and their affect on the ABV from the sugars. Any ideas over anything in the recipe would be greatly appreciated
I always have a tuff time with cherry. I always expect it to be like something like the NG cherry and am always let down. On a side note I might put more grain. You can also just kill the yeast after you put the cherry in so they don't ferment out.
