Anyone know a recipe for something with cherries and a oak barrel? (had bourbon in it, but mostly oak flavor comes through in it now) I was reading Sam C's Extreme Brewing book and they had a recipe for Sour Cherry ale, that I though I could Secondary in the Oak Barrel. I dont want to mess with any Funky Yeast in the barrel yet though so was thinking of letting the cherries add some sourness/tart to the beer. Thanks.
Olde Hickory did a pair of one off beers for a bar here in Raleigh. The first one is an RIS aged in bourbon barrels with cherries, and the second is a imperial saison aged in apple brandy barrels with cherries. There's a thread here with info. I haven't opened either yet (tiny run, only got one of each), but I expect good things from the stout. Word around town is that it is lights out, and the saison is good but not great. The only other cherry beers I've had are krieks, but it sounds like that's out for you.
