I feel like making a poll. Choose my next beer for me! I will order (and hone, if necessary) the ingredients based on the results of this thread.

Saison... 3724 only, or my vote is void :grinning:

    Write in:

2-row Maris Otter / Fuggles SMaSH with extra long boil for malliard reactions (ala Sgt Stogie)

I know Maris Otter is technically 2-row, but I assumed you were referring to a basic 2-row.

Really? Wow! It was 3711 next time, but since I didn't specify, write-ins for yeasts count too! :sunglasses:

If nobody specifies otherwise, and saison wins, 3724 wins! You did note 64-66F, right?

Yes, they're sold in separate buckets here, so they're "different" :grinning:

Another vote for the Marris Otter / Fuggles SMaSH. Although, with the caveat that you should do a 4 hour boil, use WLP099 (Hardy's Yeast) or WY1968 and make it a bastardized JW Lees Harvest/Thomas Hardy's clone (Theirs is MO & EKG SMaSH, w/ 4 hour boil, House yeast)

I voted for Marris Otter/Simcoe but I am curious about your "petite saison". What OG? Why that temp? Did I miss a post about this?

OK, good, good! I will check the old thread and see if we discussed yeast, but I don't think we did. I really want to try new yeasts, so your yeast (WLP099) is written in!

Most likely these are amongst the next X number of beers I'm going to brew anyway, but I love the banter and discussion on these threads. :grinning:

The actual next beer in the queue already has been purchased, and is Bleach Blonde Ale IV (with willamette, cascade, and 1332 northwest ale yeast). We are voting here on what I'm going to purchase next. :sunglasses:

Yes. there was a thread. It was 12 lbs of pilsner malt and fuggles hops (4 oz, mostly late, 20-something IBUs). It came out pretty darn good!

I pulled the maris otter/simcoe idea out of my ass so I'm glad to see it has votes. Last maris otter smash I made was with willamette and the malts dominated big time. I thought a more forward hop might make for a good maris otter smash.

Petite saison, with citra, use wlp670 (I think) american farmhouse. Let me know how it goes, I want to brew a similar beer.

we will soon find out the results of my third attempt at a SMaSH recipe. I really enjoy the simplicity and ability to focus on process more so than recipe, and my first two have come out good (2nd one especially).

I'm seriously focusing on lower hopped, reasonable ABV beers trying to focus my processes. They seem to be better indicators of how you're doing than the super forgiving, extra hoppy beers. And since I just brewed a IIPA, time for a less hoppy one. I like the variety too. And with the upcoming APA IPA project, that's why I didn't list any IPAs here.

Whatever temp you can do. Mine is going at somewhere over 80*F (fermometer tops out @ 78).

I voted for non-elderberry wheat. Do standard hefe and then add some amarillo at FO and a light dryhop. Great springtime beer.

Well maris otter/simcoe smash took the lead. Unless this has changed by tomorrow, I'll be picking up 12 lbs of maris otter for my next brew!!

save the petite saison for warmer weather, and definitely use 3711 with it.

Saisons are good, if you brew one now, it'll be perfect for the weather when it warms.. Well, atleast in my neck of the woods.

    Use 3711 though!

I voted for Simcoe/ MO.. It's simple, and it's tasty, and since you love Cascades ( you do right? haha ), I think it's good to venture out and try other stuff.
